I found myself craving melkkos — that humble, old-fashioned South African dish that tastes like childhood and comfort all in one bowl.
Let’s be honest: melkkos is not a superfood. It won’t win awards for nutritional value. It’s simple — milk, flour, butter, sugar, cinnamon, but what it lacks in nutrients, it makes up for in warmth, nostalgia, and pure deliciousness and sometimes, that’s exactly what we need.
Melkkos (literally “milk food”) has been made in South African kitchens for generations. It’s the kind of dish that appears on rainy days, when money is tight or when someone just needs something soft and soothing. It is sweet, creamy, uncomplicated and it feels like home.
If you are craving a sweet, comforting snack, here’s how you can make your own bowl of warmth.
Ingredients:
2 cups milk1 additional cup milk (for mixing)
4 tablespoons flour
A pinch of salt1 tablespoon butter (plus extra for serving, if you like)
Cinnamon sugar for topping
Method:
- Pour 2 cups of milk into a pot and place it on the stove.
- Heat until it just begins to simmer, then reduce the heat to low.
- While waiting for the milk to heat, mix 4 tablespoons of flour into 1 cup of milk, whisking until smooth and free of lumps.
- Once the milk on the stove is gently simmering, slowly whisk in the flour-and-milk mixture. Keep the heat low and continue whisking to prevent lumps.
- Add a pinch of salt and 1 tablespoon of butter.
- Allow the mixture to cook slowly, stirring regularly. It will begin to thicken as it cooks. When it reaches your desired consistency — creamy and soft — remove it from the stove.
- Pour into a bowl, sprinkle generously with cinnamon sugar, and add an extra knob of butter on top if you wish.
